In February of 2006, Sommelier Michael A. Cimino established the Cottage Views School of Wine at the Lighthouse on the Hudson in Piermont, NY, as a continuing adult-education series.  

“I've always said that if you have to study anything as an adult it should be fun, and wine is not only fun but a never ending study," says Mr. Cimino.  "For these casual classes I chose to not go into a classroom.  Instead I teach the classes in a social environment where people can mingle, relax, and enjoy.  Snacks are served, and hors d'oeuvres passed, while we sip wines and learn where they came from, how they are made, and what foods they are best paired with.

“The response has been tremendous.  The students I had this past spring didn't want the classes to end, so I put together a wine and cheese party, which was a rousing success, and a Pinot Noir party.”

The four week course covers the importance of food and wine in modern America, grape growing regions of the world, how to properly open, store, and serve wine, as well as safety issues involving alcohol.

Mr. Cimino, a former employee of the Xaviar’s Restaurant Group as well as the Park Steakhouse in NJ, is a graduate of the Sommelier Society of America and has earned the Award of Distinction from Wine Enthusiast magazine as well as the Award of Excellence from Wine Spectator. He is currently the Director of Food and Beverage and sommelier at Arcola Country Club in Paramus, NJ.

  

General Information and School Policies

How to enroll:  School is not in session at this time.     

Cancellation Policy:  Cottage Views reserves the right to cancel any class due to insufficient enrollment.  Classes will be canceled if fewer than ten students register.  In such a case, students will be notified by telephone and tuition/fees will be refunded in full.  Please be sure to include a proper contact number, along with your mailing address, when submitting registration fees.

Refund Policy:  If scheduled classes proceed, refunds are issued only if registered students are unable to attend any of the classes they have enrolled for.  Once 25% of the course has been attended there are no refunds.  There is a 10% processing fee deducted from all refunds.

Damage/Loss of Personal Property:  Cottage Views and any of its associate restaurants/restaurateurs assumes no responsibility, either real or implied, for personal property of any student.  Students are also required to review and sign the Cottage Views Registration form upon arrival of their first class.

Certificates of Completion will be administered to students who have completed at least 75% of the course.
