is the “go-to” book for all restaurateurs

who really care about service and education.

This guide has been compiled from the curriculum designed for the Cottage Views School of Wine, which was founded in 2006.

Although this is an easy to read basic course geared for employees of the food service industry it is recommend for anyone interested in expanding their basic knowledge of wine.

When Michael A. Cimino opened the wine school the students ranged from young waiters and bartenders to lawyers, retired couples, school teachers, musicians, and even a concert promoter.

He has always maintained “If you have to study anything as an adult it should be fun.  Wine is not only fun, but a never ending study.  I constantly study, and teach.  After all, teaching helps solidify your knowledge.

Mr. Cimino’s formal training was at The Sommelier Society of America, the nation’s oldest wine teaching organization, which was founded in 1954.
